Final

    Honey Garlic Chicken with Roasted Green Beans

     For my final cooking project I chose to cook Honey Garlic Chicken with Roasted Green Beans. As far as my outcome for my chicken I wanted the breast to be slightly browed with a slight crunch but also tender and juicy. For my sauce I wanted to create a thick coating with a caramel brown color. My beans I wanted to be juicy and flavorful with a slight crunch. 

I first cut my chicken breasts into 4 steaks and sprinkled each side with salt and pepper, I then went into giving them a flour bath. 

 I then melt most of the butter in a large skillet over high heat and keep about  1 tsp for later. After that I placed the  chicken in the skillet and cooked it  for 2 – 3 minutes. 

I made a bit of room in the pan and added the remaining butter and  garlic. 

It was then time to add in the vinegar, soy sauce and honey. I brought the sauce to  simmer until it thickened. It was in this step that the caramelization of sugar when the sugar in the honey-garlic sauce caramelizes when exposed to heat, turning from its original color to a deeper golden brown.

In this video you see the maillard reaction when the proteins and sugars in the chicken and the honey-garlic sauce are exposed to heat. It leads to the browning and development of the flavors. You also see emulsification in the sauce when the honey-garlic sauce is heated and mixed with the chicken juices, it goes through emulsification. 

Once my sauce thickened I removed it from the stove and drizzled the remaining sauce on top. 

Now on to my green beans. I actually left a little bit of my honey garlic sauce in the pan and added a small cube of butter and minced garlic to saute my beans in. 

I let them cook in the sauce for 10 minutes and by then they were caramelized and ready to eat.

Here was my final outcome. I believe I accomplished all of my desired outcomes including my chicken breast being slightly browed with a slight crunch but also tender and juicy. My sauce exceeded my expectations of a caramel brown color and rich flavor. And finally my beans were perfectly juicy with an amazing punch of flavor.

This meal was fantastic and I cannot wait to make it again!
